GRILLED SCALLOP WITH GARLIC MOUSSELINE AND SPHERIKA SALMON ROE

INGREDIENTS:

  • 1 scallop (with its shell)
  • 1jar Spherika salmon roe

For the mousseline

  • 1/2 garlic clove
  • 1 egg
  • 1 egg yolk
  •  Sunflower oil
  •  Salt
  • Lemon juice

 

PREPARATION:

  1. Make a mousseline with all ingredients using a blender. It must be very thick, so add the necessary amount of oil until getting the desired texture. Set aside.
  2. Remove the scallop from its shell and grill it over a high heat. Add salt and cook until brown on both sides. Place it in its shell again and top with the garlic mousseline.
  3. Heat mousseline with a blowtorch to gradually soufflé. Top with Spherika salmon roe, which will give a distinctive flavor
