RED PRAWN CARPACCIO WITH MOLUGA

INGREDIENTS

  • 10 prawns
  • Wakame seaweed
  • Lime
  • Pepper
  • Maldon salt
  • Moluga herring pearls

PREPARATION

  1. Peel and devein the prawns and put them in a freezer bag.
  2. With a rolling pin, crush the prawns (individually is better) until they are very smooth and place in the freezer for 30 minutes.
  3. To serve, place the frozen prawns on a plat with strands of wakame, a little lime zest, a dash of oil and a little salt.
  4. Decorate with Moluga herring pearls
