INGREDIENTS
- 10 prawns
- Wakame seaweed
- Lime
- Pepper
- Maldon salt
- Moluga herring pearls
PREPARATION
- Peel and devein the prawns and put them in a freezer bag.
- With a rolling pin, crush the prawns (individually is better) until they are very smooth and place in the freezer for 30 minutes.
- To serve, place the frozen prawns on a plat with strands of wakame, a little lime zest, a dash of oil and a little salt.
- Decorate with Moluga herring pearls
