- 3/4kg Potatoes
- 1 Onion
- 8 Quail eggs
- 120g jar Avruga
- Extra virgin olive oil
- 1tsp fresh parsley, finely chopped
- Salt and pepper
- Cut potatoes into rounds and chop onion finely. Fry these ingredients in a frying pan with plenty of olive oil. Serve on a dish.
- Fry the eggs and arrange them on top of the potatoes. Carefully break the eggs and season lightly.
- Sprinkle chopped parsley on top and add Avruga to taste
