TOMATO AND STRAWBERRY GAZPACHO WITH STRAWBERRY SPHERIKA PEARLS

INGREDIENTS:

  • 600 gr of ripe tomatoes.
  • 400 grams of strawberries
  • 50 gr of red pepper
  • 60 gr of green pepper
  • 80 gr of cucumber (clean without seeds)
  • 40 gr of breadcrumbs
  • 1.5 g garlic (a small garlic)
  • 150 ml of EVOO
  • 500 ml of mineral water
  • 20 ml of sherry vinegar
  • 12 gr of coarse salt
  • a pinch of pepper
  • 55g strawberry Spherika pearls

PREPARATION:

  1. Wash all the vegetables, peel and remove the seeds from the cucumber. Cut the tomato into pieces.
  2. Reserve the strawberries.
  3. Chop everything into pieces and put it in a saucepan or bowl. Add the rest of the ingredients (oil, vinegar, garlic, salt water), except the strawberries.
  4. Mix well, cover and leave in the fridge for about 8 hours.
  5. After that time, add the chopped strawberries and beat in a blender.
  6. Strain and season to taste.
  7. Serve very cold, accompanied by a spoonful of Spherika strawberry pearls.
