HAUNTED CAULDRON WITH BLACK HERRING SPHERIKA PEARLS

INGREDIENTS :

  • 800g of pumpkin in a pumpkin
  • 2 carrots
  • 1 potato
  • 1 onion
  • Extra virgin olive oil
  • 700ml vegetable broth
  • 50ml of liquid cooking cream
  • Salt and pepper
  • 1 jar of black Spherika herring pearls
  • 1 handful of chestnuts (optional)

PREPARATION:

  1. Empty the pumpkin, recover the flesh and cut it into large chunks.
  2. Peel the carrots and potato, wash them and cut them into large pieces. Chop the onion.
  3. Pour the extra virgin olive oil in a casserole and brown the vegetables.
  4. Cover with the vegetable stock and season to taste.
  5. Cook for 25 minutes over medium heat, until the vegetables are soft.
  6. Remove the pan from the heat and blend with an electric mixer until smooth. Add the cream and stir to integrate.
  7. Pour the pumpkin cream into the pumpkin and add the black Spherika herring pearls.
