  • 200g Gruyère cheese, grated
  • 200g Emmental cheese, grated
  • 1 clove garlic, cut in half
  • 300ml dry white wine
  • 1 teaspoon lemon juice
  • 2 teaspoons cornstarch
  • 1 tablespoon kirsch (optional)
  • Nutmeg and pepper to taste
  • Bread, cut into cubes


Rub the inside of a fondue pot with the garlic.
Add the wine and lemon juice to the pot and heat until hot, but not boiling.
Gradually add the grated cheeses, stirring constantly in a "figure eight" pattern until the cheese is melted and the mixture is smooth.
Dissolve the cornstarch in the kirsch and add it to the cheese mixture. Cook until the fondue is thick and creamy.
Season with nutmeg and pepper.
