VEAL CARPACCIO WITH SPHERIKA PEARLS OF OLIVE OIL

INGREDIENTS: (4 servings)

  • 400 of beef tenderloin.
  • 100 Grana Padano cheese shavings or Parmesan cheese.
  • 50 g chives.
  • 1 jar of Spherika Extra Virgin Olive Oil pearls.
  • 70 g lemon juice.
  • 100 ml of extra virgin olive oil.
  • Fine salt.
  • Black pepper.


PREPARATION:

  • Put the lemon juice, oil, salt and ground pepper in a bowl.
  • Emulsify with a whisk until all the ingredients are perfectly mixed.
  • Cut the meat very thinly, almost transparent. It can be put in the freezer for half an hour to make it firmer and easier.
  • In a large dish or plate, place the meat and sprinkle the cheese shavings and the chives cut into small pieces on top.
  • Drizzle with the sauce and accompany with the Spherika pearls of extra virgin olive oil.
  • Serve immediately.
