INGREDIENTS: (4 servings)
- 400 of beef tenderloin.
- 100 Grana Padano cheese shavings or Parmesan cheese.
- 50 g chives.
- 1 jar of Spherika Extra Virgin Olive Oil pearls.
- 70 g lemon juice.
- 100 ml of extra virgin olive oil.
- Fine salt.
- Black pepper.
PREPARATION:
- Put the lemon juice, oil, salt and ground pepper in a bowl.
- Emulsify with a whisk until all the ingredients are perfectly mixed.
- Cut the meat very thinly, almost transparent. It can be put in the freezer for half an hour to make it firmer and easier.
- In a large dish or plate, place the meat and sprinkle the cheese shavings and the chives cut into small pieces on top.
- Drizzle with the sauce and accompany with the Spherika pearls of extra virgin olive oil.
- Serve immediately.
