- 1 mini watermelon
- 200g feta cheese
- 15 pitted black olives
- 1 lemon
- Extra virgin olive oil
- Salt
- Pepper
- a few mint leaves
- 1 jar of Spherika pearls of balsamic vinegar of Modena
- Cut the top of the watermelon.
- Cut the pulp into 2 cm cubes and pour them into a large bowl.
- Cut the feta cheese into 2 cm cubes and add them to the watermelon cubes.
- Cut the black olives and add to the mixture.
- Mix and season with lemon juice, olive oil, salt and pepper.
- Fill the watermelon with the cubes of watermelon and feta.
- Garnish with fresh mint leaves.
- Finish with Spherika pearls of Modena balsamic vinegar to taste.
