CHICKEN WITH DATE SPHERES AND ORANGE SAUCE

Ingredients:

  • 6 boneless, skinless chicken thighs
  • Date spheres 55g
  • 2 oranges (juice and zest)
  • 3 tablespoons of honey
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Chopped fresh parsley to decorate

Instructions:

  • Preparation of the sauce: In a medium bowl, mix the orange juice and zest, honey, soy sauce, minced garlic and grated ginger. Stir well until all the ingredients are well mixed. This will be your orange sauce to marinate and glaze the chicken.

  • Marinating the chicken: Place the chicken thighs in a deep bowl and pour half of the orange sauce over them. Make sure they are well covered. Reserve the rest of the sauce for later.
  • Add the date pearls to the bowl with the chicken and orange sauce, mixing gently to combine. Marinate in the refrigerator for at least 1 hour so the flavors can blend.
  • Cooking the chicken:
    • Preheat the oven to 200°C (390°F).
    • Remove the chicken thighs from the marinade and place them on a baking sheet lined with baking paper. Reserve excess marinade.
    • Final glaze:
    • In a small skillet, heat the reserved marinade over medium heat.
    • Cook the sauce for a few minutes until it reduces slightly and thickens.
    • Once the chicken thighs are ready, remove them from the oven and brush them with the reduced orange sauce.
    • Serve:
    • Serve the chicken thighs on individual plates, accompanied by the date spheres.
    • Sprinkle some chopped fresh parsley on top for decoration.
