- 12 medium oysters
- 1 Egg yolk
- 10cl Milk
- Micro sprouts
- 1 tin Spherika baeri caviar
- Open the oysters, collect their water, heat over a gentle heat and poach the oysters without shells for 1 minute.
- Strain the water through a muslin cloth, add the egg yolk beaten with the milk and whisk until frothy, letting as much air in as possible.
- Return the oysters to their shells, place a small spoonful of foam on each. Top with a teaspoon of Spherika caviar and garnish with a few micro-sprouts.
- Serve immediately.
