OYSTERS IN SEA FOAM WITH SPHERIKA CAVIAR

INGREDIENTS:
  • 12 medium oysters
  • 1 Egg yolk
  • 10cl Milk
  • Micro sprouts
  • 1 tin Spherika baeri caviar
METHOD:

  1. Open the oysters, collect their water, heat over a gentle heat and poach the oysters without shells for 1 minute.
  2. Strain the water through a muslin cloth, add the egg yolk beaten with the milk and whisk until frothy, letting as much air in as possible.
  3. Return the oysters to their shells, place a small spoonful of foam on each. Top with a teaspoon of Spherika caviar and garnish with a few micro-sprouts.
  4. Serve immediately.
