INGREDIENTS:
For the mass:
- 110 g wheat flour
- 115 g cold butter, cut into cubes
- 60 g cold water
- 1/2 teaspoon salt
For the filling:
- 1 red bell pepper, cut into small cubes
- 1 green bell pepper, cut into small cubes
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1 dried chipotle chili (or in adobo), chopped into small pieces (adjust the amount depending on your heat tolerance)

- 110g grated cheddar cheese
- 4 eggs
- 240 g cream
- Salt and pepper to taste
- Olive oil to sauté the vegetables
PREPARATION :
For the mass:
- In a large bowl, mix the flour and salt. Add the cold butter cut into cubes.
- Use a fork or pastry cutter to mix the butter into the flour until the mixture resembles coarse crumbs.
- Add the cold water and mix until the dough comes together. Shape into a ball, wrap in plastic wrap and refrigerate for at least 30 minutes.
For the filling:
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat some olive oil over medium heat. Add the chopped onion and garlic and sauté until golden.
- Add the red and green peppers, as well as the chopped chipotle chile. Cook the vegetables for about 5 minutes until tender. Then, add the chipotle chili spheres and cook for a few more minutes.
- In a separate bowl, beat the eggs and cream. Add the grated cheddar cheese and mix well. Then, add the sautéed vegetables and mix everything. Season with salt and pepper to taste.
Assembling the quiche:
- Roll out the dough on a floured surface until it is the right size for your tart pan (usually 9 inches or 23 cm in diameter).
- Place the dough in the tart pan and trim any excess from the edges.
- Pour the egg and vegetable mixture over the dough.
- Bake the quiche in the preheated oven for approximately 35-40 minutes, or until golden brown and set in the center.
- Let cool for a few minutes before serving.
