The chipotle pepper is a type of chili that is obtained by smoking and drying ripe jalapeno peppers. Jalapenos are green chili peppers used in Mexican cuisine and have a moderate spicy flavor. When smoked and dried, they become chipotle peppers, which are darker, have a smoky flavor and a more intense heat.
