AREPAS OF PERICO WITH SPHERIKA LUMPO ROE

How to make arepa de perico: steps to follow

PREPARATION:

  1. The main thing for the arepa de perico is to make the arepa itself with our own hands. Making the dough is very simple, since you only have to take a bowl large enough to include all the mentioned ingredients.
  2. It is important that the butter is melted. Once we have added them, it is time to knead until obtaining a fine elastic dough.
  3. Once the dough is obtained, we take it out of the container to divide it into equal parts until we obtain around the dozen that we have calculated and we give each of them a rounded shape. Then, we crush them until they are around 1 cm thick.
  4. The next step is to roast them in a pan at a low temperature and with a light touch of oil, just enough so that the dough does not stick to it.
  5. Once finished, it's time to get to the parakeet. To do this, we peel and chop the onion and also cut the green pepper and tomato into small portions.
  6. With these three ingredients we are going to make a frying pan in a couple of minutes. Meanwhile, we can go beating the egg that we will use next.
  7. We are already reaching the final phase, so we have to add the egg to the sauce and give it a touch of salt and pepper to improve the flavor.
  8. Finally, we open the arepas by cutting them in half to introduce the scrambled eggs that we have made and, of course, we give it that additional touch that we have promised with our lumpfish roe.
