Ingredients:
- 150g fresh arugula
- 2 medium potatoes
- 4 eggs
- 200g tuna in oil, drained
- Salt and pepper to taste
- Extra virgin olive oil
- Balsamic vinegar
- 50g red smoked herring spheres
Instructions:
Preparation of the potatoes and eggs:
- Wash the potatoes well and cook them in salted water until they are tender. Let them cool, peel and cut into cubes.
- Cook the eggs until hard-boiled, about 10 minutes from when the water begins to boil. Refresh, peel and cut into quarters.
Salad assembly:
- In a large salad bowl, mix the arugula, potato cubes, drained tuna and egg quarters.
- Season to taste with olive oil, balsamic vinegar, salt and pepper.
- Add the smoked herring spheres to the salad just before serving to maintain its texture.
