ARUGULA, POTATOES, EGG AND TUNA SALAD WITH RED SMOKED HERRING SPHERES

Ingredients:

  • 150g fresh arugula
  • 2 medium potatoes
  • 4 eggs
  • 200g tuna in oil, drained
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Balsamic vinegar
  • 50g red smoked herring spheres

Instructions:

Preparation of the potatoes and eggs:

  1. Wash the potatoes well and cook them in salted water until they are tender. Let them cool, peel and cut into cubes.
  2. Cook the eggs until hard-boiled, about 10 minutes from when the water begins to boil. Refresh, peel and cut into quarters.

Salad assembly:

  1. In a large salad bowl, mix the arugula, potato cubes, drained tuna and egg quarters.
  2. Season to taste with olive oil, balsamic vinegar, salt and pepper.
  3. Add the smoked herring spheres to the salad just before serving to maintain its texture.
