GRILLED SCALLOP WITH GARLIC MOUSLIN AND SPHERIKA SALMON ROE

INGREDIENTS:

  • 1 scallop (with its shell)
  • 1 jar of Spherika salmon roe
For the muslin:
  • 1/2 clove of garlic
  • 1 whole egg
  • 1 egg yolk
  • Sunflower oil
  • Salt
  • Lemon juice

PREPARATION

  1. Make a muslin with all the ingredients helping us with a blender. It has to be very thick, so we will add the amount of oil necessary to reach the desired texture. Reserve.
  2. Remove the scallop meat and grill it quite hot. Add salt and cook until toasted on both sides. Place it back in its shell and cover with the garlic mousseline.
  3. Take the blowtorch and heat the muslin that will gradually soften. Crown with salmon roe that will give it an unmistakable flavor.
