INGREDIENTS:
- 1 scallop (with its shell)
- 1 jar of Spherika salmon roe
- 1/2 clove of garlic
- 1 whole egg
- 1 egg yolk
- Sunflower oil
- Salt
- Lemon juice
PREPARATION
- Make a muslin with all the ingredients helping us with a blender. It has to be very thick, so we will add the amount of oil necessary to reach the desired texture. Reserve.
- Remove the scallop meat and grill it quite hot. Add salt and cook until toasted on both sides. Place it back in its shell and cover with the garlic mousseline.
- Take the blowtorch and heat the muslin that will gradually soften. Crown with salmon roe that will give it an unmistakable flavor.
